- 2 Tbsp Honey (or corn syrup)
- 1 Tbsp Minced Garlic
- 1 Tbsp Minced Green Onion
- 1/2 Tbsp Sesame Oil
- 1/2 Tbsp Perilla Seed Oil
- A pinch of Sesame Seeds (for garnish)
Cooking Instructions
Step 1
First, gently rinse the chewy acorn jelly under running water. Cut the jelly into bite-sized pieces, about 1.5 cm thick and long. Be careful not to cut them too thin, as they might break easily. Aim for a moderate thickness.
Step 2
Wash all the vegetables thoroughly and pat them dry. Tear the lettuce and perilla leaves into bite-sized pieces or julienne them. Julienne the carrot and cucumber thinly. Place the cut vegetables in a colander to drain any excess water; this prevents the salad from becoming too watery and dilute the dressing.
Step 3
While the vegetables are draining, let’s make the delicious dressing. In a small bowl, combine the soy sauce, fish sauce, vinegar, red pepper flakes, honey, minced garlic, and minced green onion. Mix them well until evenly combined. You can substitute corn syrup for honey, and adjust the sweetness to your preference.
Step 4
Now it’s time to bring all the ingredients together! Place the cut acorn jelly and the drained vegetables into a large bowl. Pour the prepared dressing evenly over the ingredients. Gently toss everything together, being careful not to break the jelly. The key is to mix them softly to maintain the crispness of the vegetables and the tenderness of the jelly.
Step 5
Finally, plate the acorn jelly salad attractively and sprinkle generously with sesame seeds for an aromatic finish. Enjoy this delightful combination of fresh vegetables and chewy jelly that’s perfect for a light meal or when you need an appetite booster!
