First, wash the persimmon thoroughly and peel off all the skin. Then, slice the persimmon into pieces that are slightly thinner than what you’d consider a ‘bite-sized’ portion, making sure they won’t overlap too much in the air fryer. Aim for about 8-9 slices from one persimmon; this thickness is usually perfect for achieving the right texture. Slicing them thinly is key, as thicker pieces may not dry out properly.
Step 2
Preheat your air fryer to 180℃ (350℉) for about 5 minutes. Once preheated, arrange the sliced persimmon pieces in a single layer inside the air fryer basket, leaving some space between them. This spacing allows air to circulate effectively, which is crucial for developing that desirable chewy texture.
Step 3
Now it’s time to cook! Lower the air fryer temperature to 120℃ (250℉) and cook for 30 minutes. After 30 minutes, check the persimmons and flip them over. Continue cooking for another 30 minutes at 120℃. If they still feel a bit soft or moist, you can continue cooking in 30-minute increments at the same temperature until they reach your desired chewy consistency. Once they’re nicely chewy and have lost most of their moisture, your delicious dried persimmon bites are ready! Adjust the cooking time based on your preference for chewiness.
