Main Ingredients

  • 1 pack konjac
  • 1 pack Daphri seafood stock packet
  • 1/4 onion (cut into large pieces)
  • 1/2 stalk green onion (cut into large pieces)
  • 2 Cheongyang peppers (sliced diagonally)
  • 1 Tbsp soju
  • 1 Tbsp vinegar
  • Water (for boiling and braising konjac)
  • 1 handful whole garlic cloves (about 5-6 cloves)

Seasoning

  • 6 Tbsp soy sauce
  • 2 Tbsp sugar
  • 2 Tbsp honey
  • 1 tsp sesame seeds

Cooking Instructions

Step 1

First, drain the konjac and slice it into pieces about 1cm thick, making them easy to eat. Slicing them not too thin will result in a better texture when braised.

Make a cut about 2/3 of the way into the center of each konjac slice. This allows the seasoning to penetrate better, making it more flavorful.

Turn one end of the cut konjac through the slit you just made. This creates a beautiful flower-bud shape. Repeat this process for all the konjac pieces.

In a pot, add enough water to cover the konjac, along with 1 tablespoon of soju and 1 tablespoon of vinegar. Once the water boils, add the prepared konjac and boil for about 3 minutes. This step helps remove any unpleasant odor from the konjac and enhances its bouncy texture.

Remove the boiled konjac from the pot and rinse it under cold running water 2-3 times until clean. Drain the rinsed konjac in a colander.

In another pot, add 500ml of water, the Daphri seafood stock packet, large pieces of onion and green onion, diagonally sliced Cheongyang peppers, and whole garlic cloves. Bring to a boil to create a broth. Once the broth has infused, you can remove the stock packet and some of the solids.

To the broth, add 6 tablespoons of soy sauce and 2 tablespoons of sugar, mixing well to create the braising liquid. You can also use honey instead of sugar, and adjust the sweetness to your preference.

Now, add the drained konjac to the seasoned broth and begin to braise it.

Over medium-low heat, let the konjac simmer, flipping it occasionally, until the liquid has reduced and become slightly syrupy. It’s important to be patient and let the flavors meld into the konjac. For a glossy finish, add 2 tablespoons of honey towards the end and simmer for another moment. Transfer the finished braised konjac to a serving dish and sprinkle with 1 teaspoon of sesame seeds.
