Chewy and Delicious Clam Salad with Seasoning (Ggomak Yangnyeom Muchim)

This chewy and savory clam salad is a family favorite. It’s an absolute appetite stimulant that pairs wonderfully with rice. Today, I’ll share a simple recipe for delicious clam salad that you can easily make at home. As long as you have fresh clams, anyone can follow along!

Main Ingredients

  • 2kg Clams
  • A little green onion (chopped)
  • 1 Red chili pepper (seeds removed and finely minced)

Seasoning Ingredients

  • 1 Tbsp Fish sauce
  • 1 Tbsp Soy sauce for soup
  • 1/2 Tbsp Soy sauce
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Tbsp Minced garlic
  • 1 Tbsp Maesilcheong (Plum extract)
  • 1/3 Tbsp Sesame oil

Cooking Instructions

Step 1

This is the first step to preparing fresh clams. Place the clams in a black plastic bag and let them purge in concentrated saltwater (plain water with a little salt) for about 3 hours. Rinse them thoroughly several times while being careful not to let them knock against each other and break their shells. Fill a pot with plenty of water and bring it to a boil. When small bubbles start to appear, carefully add the cleaned clams and boil them.

To eliminate any fishy smell and enhance the flavor, add a little cooking wine or cheongju (rice wine) while boiling the clams. After adding the clams, stir them gently in one direction only. This method helps prevent the clam meat from sticking to one shell, making it easier to separate them later.

As soon as the clams start to open their shells, turn off the heat. Boiling them for too long can make them tough, so aim for just slightly open shells. Leave them in the pot for a short while after turning off the heat to finish cooking with the residual heat.

Drain the boiled clams in a colander and let them cool slightly. It’s best to remove the shells while they are still warm; this prevents the meat from breaking apart and allows for clean separation. Carefully remove the shells from each clam, separating the meat.

Now, it’s time to make the delicious seasoning that will define the flavor of your clam salad. (For 2kg of clams) In a bowl, combine 1 Tbsp fish sauce, 1 Tbsp soy sauce for soup, 1/2 Tbsp soy sauce, 1 Tbsp gochugaru (Korean chili flakes), 1/2 Tbsp minced garlic, 1 Tbsp maesilcheong (plum extract), and finally, 1/3 Tbsp sesame oil.

Add the vegetables that will give color and flavor to the seasoning. Add 1 finely minced red chili pepper (seeds removed) and the chopped green onions you have prepared. You can also add finely chopped carrots or onions for extra flavor if you like.

Using a spoon or spatula, thoroughly mix all the seasoning ingredients and vegetables in the bowl. Stir well to ensure the flavors meld together. Taste and add a little more soy sauce or fish sauce if needed.

Finally, add the prepared clam meat to the seasoning bowl and gently mix everything together. Be careful not to mash the clam meat while mixing. Your delicious clam salad is ready! It tastes great right away, or you can chill it in the refrigerator for an even more refreshing experience.
