Chewy and Delicious Corn Rice: A Secret Recipe (Rice Cooking, How to Cook Rice, Corn Dishes, Mixed Grain Rice)
We used hard corn harvested late from the countryside, which we froze after finding it too tough to steam or boil. When cooked into rice, it turned out wonderfully chewy and flavorful! This recipe transforms tough corn into a delightful side dish that’s perfect for any meal.
Main Ingredients- 2 handfuls frozen corn kernels (approx. 1.5 cups)
- 400ml mixed grains rice (approx. 2 cups)
- 500ml water (approx. 2.5 cups, adjust according to rice cooker markings)
Cooking Instructions
Step 1
If using fresh corn, carefully remove the kernels from the cob. Wash them thoroughly, drain any excess water, and store them in a freezer bag. Freezing pre-portioned corn makes it incredibly convenient to grab and use whenever you decide to make rice.
Step 2
In your rice cooker’s inner pot, add 400ml of mixed grains rice. Then, add the 2 handfuls of pre-washed frozen corn kernels. Washing the rice and corn together allows the corn’s starch to lightly coat the rice grains, resulting in a chewier texture.
Step 3
Pour 500ml of water into the rice cooker with the washed rice and corn. Refer to your rice cooker’s water level guide for mixed grains, and select the ‘Mixed Grains’ cooking mode to begin. This mode typically uses a longer cooking and steaming time, ensuring the corn is tender and the rice becomes perfectly chewy.
Step 4
Once the rice cooker signals that the rice is done, use a rice paddle to gently fluff the rice. Mix from the bottom up to distribute the moisture evenly throughout the pot. Be gentle to avoid mashing the corn kernels and keep them intact.
Step 5
