Recipe for Chewy Dried Radish Salad made with Seasonal Autumn Radish
A perfect side dish that will make you want more rice! Enjoy making this delicious dried radish salad at home, featuring a soft, chewy texture and excellent savory flavor. The addition of onion-infused soy sauce adds a deeper, richer taste.
Main Ingredients- 3 handfuls of dried radish (approx. 300g when rehydrated in soy sauce mixture)
- 1.5 cups of onion-infused soy sauce
Seasoning Ingredients- 4 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 2 Tbsp corn syrup (or rice syrup)
- 1 Tbsp chopped green onion
- 1 Tbsp sesame oil

Cooking Instructions
Step 1
First, wash the dried radish by gently rubbing it with your hands in cold water to remove any dirt or debris. Repeat this process about 4 times. This step is crucial for eliminating the radish’s characteristic earthy or slightly pungent smell, resulting in a much cleaner taste.

After washing thoroughly, place the dried radish in a sieve to drain any excess water. Let it sit for about 30 minutes to allow it to naturally release moisture. This will help the seasonings to penetrate better in the next steps.

Now, it’s time to rehydrate the dried radish and infuse it with flavor. Use the special onion-infused soy sauce you prepared earlier and pour it over the drained dried radish. The sweetness and umami from the onion will soak into the radish, adding a unique and delightful flavor.
