Soak the dried radish in lukewarm water for about 15-20 minutes until it’s well rehydrated. Tip: The soaking time may vary depending on how dry the radish is. If it’s very hard, soak it a bit longer; if it’s already soft, reduce the time.

Gently touch the rehydrated radish with your hands to check if there are any hard parts and if it has become soft.

Drain the well-soaked radish in a sieve and rinse it thoroughly several times under running water. This step removes any impurities or dirt.

Gently squeeze the excess water out of the rinsed radish with both hands. Be careful not to squeeze too hard, as this can make it dry; aim for a moist texture.

Wash the scallion, then finely chop the green part, about 10cm in length. Finely chopped scallions will mix well with the radish.

Now, let’s make the delicious seasoning! In a large bowl, combine 1 tsp minced garlic, 2 Tbsp all-purpose soy sauce, 2 Tbsp gochugaru, 2 Tbsp gochujang, 3 Tbsp honey, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds.
