First, prepare the Cheongyang and red chili peppers to add flavor to your enoki mushroom pancakes. Wash the peppers thoroughly, remove the seeds, and mince them very finely. If you enjoy a spicier kick, feel free to adjust the amount of Cheongyang chili or substitute red bell pepper for the red chili pepper.
