- 2 Tbsp Oligodang (or corn syrup)
- 1 Tbsp Chicken Stock (or MSG)
- 1 Tbsp Minced Garlic
- 1 Tbsp Maesil Cheong (Korean plum extract)
Cooking Instructions
Step 1
First, let’s prepare the essential sauce for a delicious Jjolbokki. In a bowl, add 3 tablespoons of Gochujang.
Step 2
Next, add 1 tablespoon of Gochugaru for a vibrant color and spicy kick.
Step 3
For a touch of sweetness, add 2 tablespoons of Oligodang (or corn syrup).
Step 4
To enhance the savory depth, add 1 tablespoon of Chicken Stock (or a dash of fish sauce or MSG).
Step 5
Now, add 1 tablespoon of minced garlic for a fragrant aroma.
Step 6
Finally, stir in 1 tablespoon of Maesil Cheong for a sweet and tangy note. Mix all the ingredients well and let them meld together for a moment. This allows the flavors to deepen and harmonize.
Step 7
Now, pour 800ml of Anchovy and Kelp Broth into a pot where you’ll cook the Jjolbokki. If you don’t have broth, plain water will work too.
Step 8
Once the broth begins to boil, add all the prepared sauce and stir gently to dissolve it evenly. Make sure there are no clumps of sauce.
Step 9
When the sauce is bubbling vigorously, add the 20 Tteokbokki rice cakes, which will provide a wonderfully chewy texture.
Step 10
Next, add 1 sheet of square fish cake, cut into bite-sized pieces (like triangles).
Step 11
For a more filling meal, add 2 hard-boiled eggs. You can add them whole or cut them in half. The eggs will soak up the delicious sauce!
Step 12
Add 1/2 onion, sliced into strips, for a sweet crunch.
Step 13
For an abundance of vegetables, add 200g of cabbage, chopped into large pieces. The cabbage will soften and release its natural sweetness, enhancing the broth.
Step 14
Finally, add the star ingredient – 200g of Jjolmyeon noodles – and cook until all the ingredients are tender. Be careful not to overcook the jjolmyeon, as it can become mushy. Cook until the vegetables are soft.
Step 15
When the ingredients are almost cooked, add 1/2 green onion, sliced diagonally, to impart a fresh flavor and aroma.
Step 16
Drizzle in 1 tablespoon of perilla oil for a nutty and rich fragrance. The perilla oil will elevate the overall flavor profile of the Jjolbokki.
Step 17
Finish by sprinkling 1 tablespoon of sesame seeds for an extra nutty touch. Give everything a gentle stir to combine.
Step 18
Transfer the finished Jjolbokki to a serving dish. For an optional touch, sprinkle 1 tablespoon of grated Parmesan cheese over the top for a hint of Italian flavor.
Step 19
Garnish with 5 perilla leaves, thinly sliced. Their aromatic quality pairs wonderfully with the Jjolbokki. (You can also use thinly sliced white parts of green onions as a garnish.)
Step 20
Your delicious Jjolbokki, with its perfect combination of chewy noodles, soft rice cakes, and abundant vegetables, is now ready! Enjoy this refreshing and flavorful dish. We hope you have a wonderful meal! ^^
