Mastering Ma-jeon: A ‘Soomi’s Side Dish’ Inspired Recipe
Recreate the beloved Ma-jeon from the popular Korean cooking show ‘Soomi’s Side Dish’ right in your own kitchen! This delightful pancake offers a wonderfully chewy texture, reminiscent of potato pancakes, combined with the fresh, savory notes of chives. Served with a dipping sauce, it’s an absolutely delicious treat that’s perfect for any occasion. Experience a unique flavor with this special ingredient, ‘Ma’ (Korean yam).
Ma-jeon Ingredients- 1 Korean yam (Ma)
- 1/4 onion
- A handful of chives
- A small amount of carrot
- 4-5 Tbsp all-purpose flour
Dipping Sauce- Soy sauce (for dipping)
- Soy sauce (for dipping)
Cooking Instructions
Step 1
First, carefully peel the Korean yam (Ma). Then, use a grater to finely grate the yam. Be aware that yam can be slippery when peeling or grating, so it’s recommended to wear gloves for safety. Grated yam is the key ingredient that gives the pancake its signature chewy texture.
Step 2
Wash the chives and chop them finely. Finely dice the onion and carrot as well. Place the grated yam, chopped vegetables, and 4-5 tablespoons of all-purpose flour into a bowl. Mix everything thoroughly to create a batter. The batter should not be too runny; it should be thick enough for the ingredients to hold together. If it seems too stiff, you can add a tiny bit of water.
Step 3
Heat a frying pan over medium-high heat and add a generous amount of cooking oil. Spoon portions of the batter into the hot pan to form pancakes of your desired size. Cook until golden brown and crispy on both sides over medium-low heat. Your delicious Ma-jeon is ready! For an enhanced flavor, serve with a tangy soy sauce dip (e.g., mix soy sauce with a little vinegar, sugar, and water). Enjoy your Ma-jeon while it’s warm!
