Chewy and Delicious Oyster Mushroom Jorim Recipe

Easy and Savory Braised Oyster Mushrooms

For all mushroom lovers out there, this is for you! Today, we’re making a delightfully chewy and delicious braised oyster mushroom dish that’s incredibly easy to prepare and perfect even for picky eaters. Forget meat jorim; this banchan (side dish) is so good, you’ll never get tired of it!

Main Ingredients
  • Approximately 1kg Oyster Mushrooms (prepared into bite-sized pieces)
  • 1 handful of whole garlic cloves (about 10-15)
  • 1 dried red chili pepper or 1 fresh red chili pepper (seeds removed)
  • 1 handful of minced green onions
  • 1 Tbsp toasted sesame seeds

Braising Sauce
  • 2 cups water (using a paper cup as a measure)
  • 1/2 cup soy sauce (using a paper cup as a measure)
  • 2 Tbsp sugar
  • 5 Tbsp corn syrup (or rice syrup/oligosaccharide)
  • 2 Tbsp rice wine (or soju)

Cooking Instructions

Step 1

Pour 2 cups of water (measured with a paper cup) into a pot. This will form the base of your braising sauce.

Step 2

Add 1/2 cup of soy sauce for a rich umami flavor. Using regular soy sauce (jin-ganjang) rather than soup soy sauce will give a better color and taste.

Step 3

Add 2 Tbsp of sugar for sweetness, 5 Tbsp of corn syrup (or rice syrup/oligosaccharide) for a glossy finish, and 2 Tbsp of rice wine (or soju) to enhance flavor and remove any mushroomy smell. Stir with a spatula until the sugar is completely dissolved.

Step 4

Trim the tough, woody ends from the oyster mushrooms. Then, tear the mushrooms into bite-sized pieces (about 3-4 cm long) by hand. The photo shows 4 large clusters, but add all 1kg of prepared mushrooms to the pot. Tearing them by hand helps them absorb the sauce better and improves the texture.

Step 5

Add the whole garlic cloves and the dried red chili pepper (or fresh red chili pepper) to the pot. The garlic will become soft and sweet as it braises with the mushrooms, making it a delicious addition. Use dried chili for a bit of heat or fresh chili for color.

Step 6

Start by bringing the mixture to a boil over high heat. Once it’s boiling vigorously, reduce the heat to medium or low. Let it simmer gently for about 15-20 minutes, or until the mushrooms are tender and the sauce has reduced to about half its original volume. Stir occasionally to prevent the mushrooms from sticking or burning.

Step 7

When the sauce has reduced to about half (approximately 1 cup remaining), add the minced green onions and stir them in gently. Turn off the heat immediately. Sprinkle generously with toasted sesame seeds for a nutty finish. Your delicious braised oyster mushrooms are ready! They can be enjoyed right away or stored in the refrigerator for a convenient side dish.
