I’ve made a delicious seasoned clam dish using fresh, seasonal clams. Clams are in season from November to March, making this the perfect time to enjoy them. While it requires a bit of effort, their chewy texture and savory flavor make them a popular side dish for rice or a great accompaniment to drinks. I’ll share the secret to our special clam seasoning sauce in detail!
Clam Preparation- 1kg fresh clams
- 1-2 Tbsp coarse salt (for purging)
- Plenty of water
Cooking Instructions
Step 1
First, it’s crucial to clean the clams thoroughly. Put on rubber gloves and scrub the surface of the clam shells vigorously to remove any dirt. Then, fill a bowl with plenty of cold water, dissolve 1-2 tablespoons of coarse salt in it to make a saltwater solution. Soak the clams in this saltwater to begin the purging process.
Step 2
Cover the bowl with the saltwater and clams with a black plastic bag, ensuring it’s completely dark inside. By purging in this dark environment for about 2-3 hours, the clams will start to expel impurities and sand. Observe them as they release more debris over time.
Step 3
After 2-3 hours of purging, when you remove the plastic bag, you’ll notice a significant amount of sand and impurities released by the clams into the saltwater. Drain the clams, then rinse them thoroughly again under running water, scrubbing the shells vigorously. Washing them about three times will ensure the clams are perfectly clean.
Step 4
While the clams are being washed, bring a pot of water to a boil over high heat. Once the water is boiling rapidly, carefully add the prepared clams. At this point, use a spoon or spatula to stir the clams in one direction. You’ll see them begin to open. As soon as more than half of the clams have opened, turn off the heat and remove them immediately. Overcooking will make them tough, so timing is key for a tender texture!
Step 5
After boiling, let the clams cool slightly. Then, carefully remove just one shell from each clam to make it easier to eat. This also allows the seasoning to penetrate better, making them even more delicious.
Step 6
While the clams are being prepared, let’s make the delicious seasoning sauce. In a bowl, combine 4 tablespoons of soy sauce, 1 tablespoon of red pepper flakes, 2 tablespoons of honey, 2 tablespoons of cooking wine, 1.5 tablespoons of sesame oil, 3 tablespoons of chopped green onions, 0.5 tablespoons of minced garlic, and 2 tablespoons of plum extract. Mix everything thoroughly until well combined. Sprinkle the toasted sesame seeds at the end for an extra nutty aroma.
Step 7
Arrange the clams with one shell removed nicely on a large plate or in a bowl. The chewy clams are now ready and look appetizing.
Step 8
Finally, generously drizzle the prepared seasoning sauce over the clams and gently toss to coat. Be careful not to mix too vigorously, as this could break the clams. It’s best to toss them gently. You can also add vegetables like cucumber or carrots according to your preference. And there you have it – a delicious seasoned clam dish!
