Chewy and Delicious Soy-Braised Baked Eggs
Transforming Leftover Baked Eggs into a Flavorful Side Dish!
We made baked eggs for a snack, but there were leftovers! Instead of letting them go to waste, I turned them into a delicious side dish. The chewy texture and savory-sweet sauce create a wonderful accompaniment to rice, perfect for meals or packed lunches. Here’s a recipe for baked egg braised eggs that’s incredibly easy to make.
Main Ingredients- 6 baked eggs
- 1 Korean chili pepper (optional)
Braising Sauce- 2/3 cup water (approx. 130ml)
- 1 Tbsp dark soy sauce (for color; substitute with regular soy sauce if unavailable)
- 1/2 cup regular soy sauce (approx. 100ml)
- 2 Tbsp corn syrup or rice syrup (sweetness adjustable)
- 1 tsp toasted sesame seeds
- 2/3 cup water (approx. 130ml)
- 1 Tbsp dark soy sauce (for color; substitute with regular soy sauce if unavailable)
- 1/2 cup regular soy sauce (approx. 100ml)
- 2 Tbsp corn syrup or rice syrup (sweetness adjustable)
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the leftover baked eggs from your snack. Peel them carefully to get them ready for braising. If the shells are difficult to peel, briefly soaking them in hot water can make it easier.
Step 2
Place all the peeled baked eggs into a pot. Pour in 2/3 cup (approx. 130ml) of water, enough to generously cover the eggs. Be cautious as too little water might cause the pot to scorch during simmering.
Step 3
To add a delicious color to the braised eggs, add 1 tablespoon of dark soy sauce. Dark soy sauce provides a richer color and a milder umami flavor than regular soy sauce, but you can substitute with regular soy sauce if you don’t have it.
Step 4
Now, add the main sauce ingredients. Pour in 1/2 cup (approx. 100ml) of regular soy sauce and 2 tablespoons of corn syrup or rice syrup. If you prefer a bit of spice, add one Korean chili pepper, cut in half, along with the other ingredients. You can adjust the amount of chili pepper or omit it according to your preference.
Step 5
Cover the pot with a lid and bring it to a boil over high heat. Once the sauce boils, reduce the heat to medium and let it simmer gently. Simmering with the lid on allows the braising liquid to come up over the eggs, ensuring an even color and flavor infusion throughout.
Step 6
Simmer over medium heat for about 20 minutes. Keep an eye on the sauce occasionally to ensure it doesn’t reduce too much. Leaving a bit of liquid is key to keeping the eggs moist and tender when served.
Step 7
Finally, sprinkle 1 teaspoon of toasted sesame seeds over the top, and your delicious soy-braised baked eggs are complete! Once cooled, store the braised eggs in an airtight container in the refrigerator. They make a fantastic side dish, perfect for topping your rice or enjoying as a side.
