With a generous box of fresh potatoes from my father, I’m making soy-braised potatoes today. This recipe is special because it’s made without adding any extra water! By tossing the potatoes with corn syrup or rice syrup, osmosis draws out the potatoes’ own moisture, resulting in a delicious braised dish. Main Ingredients

  • 7 potatoes (medium-sized)
  • 5 Tbsp rice syrup (or corn syrup)

Seasoning Ingredients

  • 5 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • Minced green onion (about 2 Tbsp)
  • 1 Tbsp cooking oil
  • Sesame seeds (for garnish)

Cooking Instructions

First, peel the potatoes thoroughly. If you are using large potatoes, about 5 should be sufficient. The potatoes in the picture are medium-sized, so I used 7.

Cut the peeled potatoes into bite-sized pieces. Avoid cutting them too small, as they might break apart during cooking. Aim for a consistent, manageable size.

Place the cut potatoes in cold water and let them soak for about 5 minutes to remove excess starch. This step helps prevent the potatoes from sticking together and maintains their shape better during braising.

Drain the potatoes completely using a colander. Transfer the drained potatoes to a bowl and add 5 tablespoons of rice syrup. Toss well to coat the potatoes evenly. Then, place them in a pot, cover with a lid, and cook over medium heat for about 10 minutes. During this stage, the potatoes will begin to release their own moisture.

While the potatoes are cooking, finely mince the green onions. Mince them finely as they will be used as a garnish.

In a small bowl, combine 5 tablespoons of soy sauce, 1 tablespoon of minced garlic, the prepared minced green onions, and 1 tablespoon of cooking oil. Mix well to create the seasoning sauce.

Once the potatoes have cooked for 10 minutes, add the prepared seasoning sauce to the pot. Continue to simmer until most of the liquid has evaporated and the potatoes are glazed. Stir occasionally to prevent sticking and burning.
