Main Ingredients- 1 Dried Skate (whole)
Seasoning Sauce- 1 handful of Wild Chives (cleaned and trimmed)
- 1/2 Green Onion (optional, finely chopped, white part preferred)
- 3 Tbsp Soy Sauce
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Toasted Sesame Seeds
- Pinch of Black Pepper
- 1 handful of Wild Chives (cleaned and trimmed)
- 1/2 Green Onion (optional, finely chopped, white part preferred)
- 3 Tbsp Soy Sauce
- 2 Tbsp Gochugaru (Korean chili flakes)

Cooking Instructions

1. Rinse the dried skate thoroughly under running water. 2. Soak the prepared skate in lukewarm water for about 1 hour, or until fully rehydrated. (The soaking time may vary depending on the thickness and dryness of the skate. It’s ready when it feels pliable and soft to the touch.) 3. Fill a steamer with water and bring it to a rolling boil. Once steaming, reduce the heat to medium, place the soaked skate in the steamer, and steam for about 10 minutes, ensuring it’s cooked through.

Once steamed, let the skate cool slightly, then arrange it attractively on a serving plate in bite-sized pieces.

Now, let’s prepare the delicious wild chive sauce! Carefully clean the wild chives. Gently pound the thicker root parts with the back of a knife until slightly mashed, then chop them into approximately 1 cm lengths.
