Simple King Oyster Mushroom Stir-Fry: Perfect for Side Dishes and Bibimbap!

Today, we’ll be making a simple stir-fry using mini king oyster mushrooms, known for their wonderful texture and aroma. These are fantastic as a side dish or as a component for bibimbap. You can whip this up easily with ingredients you likely have on hand!

Main Ingredients
  • 3 handfuls of mini king oyster mushrooms (approx. 200g)
  • 1 handful of green onion (approx. 50g)
  • 1/2 onion (approx. 100g)

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Peel the onion and slice it into 0.5cm thick strips. Cut the green onion diagonally into 0.5cm pieces, using both the white and green parts. Rinse the mini king oyster mushrooms lightly under running water, pat them dry, and then cut them into 2-3 pieces each for bite-sized portions. (If they are small, you can leave them whole!).

Step 2

Now, let’s start cooking. Heat 2 tablespoons of cooking oil in a pan over low heat. Add the sliced green onions and gently stir-fry until fragrant, allowing the oil to infuse with the onion aroma to create ‘green onion oil’. Once you can smell the delicious aroma of the green onions, proceed to the next step.

Step 3

Once the green onion oil is fragrant, add the king oyster mushrooms to the pan and increase the heat to medium. Add 2 pinches of salt for seasoning. The mushrooms will release some moisture and begin to soften as they cook.

Step 4

When the king oyster mushrooms start to look slightly translucent, add the sliced onion and stir-fry them together until the onion becomes transparent. Finally, add 1 teaspoon of oyster sauce for that savory depth and stir everything together until well combined. You can adjust the amount of oyster sauce to your preference.

Step 5

To finish, just before turning off the heat, sprinkle some sesame seeds over the top for an extra nutty flavor. Serve this over warm rice or use it as a filling for bibimbap. The combination of chewy mushrooms, sweet onions, and fragrant green onions makes for a truly delightful meal!
