Main Ingredients
  • 1 cup canned whelks (drained)
  • 1/4 onion
  • 2 handfuls prepared chives (approx. 60-80g)

Dressing
  • 2 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp anchovy sauce (kanari aekjeot)
  • 2 Tbsp kelp broth (or water)
  • 1.5 Tbsp minced garlic
  • A little sugar (adjust to taste)

Cooking Instructions

Step 1

Prepare 1 cup of canned whelks. Drain the liquid from the can and rinse the whelks two to three times under clear water. After rinsing, place the whelks in a colander to drain completely. Properly draining the whelks is crucial for the dressing to adhere well and prevent the salad from becoming watery.

Step 2

Thinly slice 1/4 onion into julienne strips. Wash the chives, pat them dry, and cut them into 4cm lengths. Cutting the chives to about 4cm makes the salad easier to eat and ensures the dressing coats them evenly, rather than being too long.

Step 3

Let’s make the delicious dressing! In a large bowl, combine 2 Tbsp red pepper flakes, 1 Tbsp anchovy sauce, 2 Tbsp kelp broth (or water if kelp broth is unavailable), 1.5 Tbsp minced garlic, and a little sugar to your preference. Mix all the dressing ingredients thoroughly until well combined.

Step 4

Add the drained whelks, julienned onion, and the cut chives to the bowl with the dressing. All the ingredients are now together, so let’s move to the next step.

Step 5

Gently toss the ingredients in the bowl to coat them evenly with the dressing. Be careful not to mix too vigorously, as this can make the chives mushy. Once the ingredients are somewhat mixed, drizzle in 1 Tbsp of sesame oil and toss lightly again to add a nutty aroma. Finally, sprinkle with 1 tsp of toasted sesame seeds to finish.
