  • 1 cup store-bought salted squid (ojingeojeotgal)
  • 1 cup water
  • 1 Tbsp sugar

Seasoning Ingredients

  • 1 Tbsp green onion (finely chopped)
  • 1 Tbsp fine gochugaru (Korean chili flakes)
  • 1 Tbsp tuna extract (or fish sauce)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds (or ground sesame seeds)

Wash the balloon flower root thoroughly under running water. Gently scrape off the skin with a knife. Cut the prepared balloon flower root into bite-sized pieces (about 3-4 cm long). Cutting them not too thinly will ensure a satisfying chew.

In a bowl, combine 1 cup of water and 1 tablespoon of sugar. Stir well until the sugar is completely dissolved to create a sugar syrup. Add the sliced balloon flower root to the syrup and let it soak for about 10 minutes. This step helps reduce any bitterness and tenderizes the root.

Drain the soaked balloon flower root and pat it dry thoroughly with paper towels. Leaving moisture can prevent the seasoning from adhering properly and make the dish watery. Finely chop the green onion after washing and trimming the root end.
