Main Ingredients- 900g Pork Shoulder/Butt, thinly sliced for stir-fry
- 1 handful dried King Oyster Mushrooms (approx. 30g)
- 1 handful dried Eggplant (approx. 30g)
- 1 small handful dried Scallions (approx. 10g)
Seasoning Ingredients- 250g pre-made Pork Rib Marinade (or a soy sauce-based marinade)
- 1 heaping tablespoon Gochujang (Korean chili paste, approx. 20g)
- 1 tablespoon minced Garlic (approx. 10g)
- A pinch of Black Pepper
- 2 tablespoons Rice Wine (Mirin or Cooking Wine)
- 1 tablespoon Sugar (approx. 10g)
- A drizzle of Sesame Oil
- A sprinkle of Toasted Sesame Seeds

Cooking Instructions

In a large bowl, place the 900g of thinly sliced pork shoulder or butt. Add 250g of the pre-made pork rib marinade and 1 heaping tablespoon of Gochujang. Mix these well into the pork.

To the pork mixture, add 2 tablespoons of rice wine (or mirin), 1 tablespoon of sugar, a pinch of black pepper, and 1 tablespoon of minced garlic. Gently massage the seasonings into the pork with your hands, ensuring everything is evenly coated. This thorough mixing is key to developing the flavor.
Step 3
Now, add the dried king oyster mushrooms, dried eggplant, and dried scallions to the marinated pork. If you have other dried vegetables or herbs available, feel free to include them! Gently toss everything together until well combined. The dried vegetables should be submerged in the marinade to rehydrate and absorb flavors.

Transfer the marinated pork and vegetables into an airtight container. Refrigerate for at least 1 to 2 days.
