  • 4 medium potatoes
  • 2 cans of canned clams (approx. 100g each)
  • 1 onion
  • 1 green chili pepper
  • 1 red chili pepper
  • A pinch of sesame seeds
  • 1 Tbsp sesame oil

Using canned clams makes cooking a breeze as they are already cooked. Drain the canned clams thoroughly in a sieve. If you are using fresh clams, boil them in water, remove the shells, and prepare them.

Wash and peel the potatoes and onion. Cut them into bite-sized pieces, about half an inch thick. Potatoes can break apart when cooked, so it’s best not to cut them too thinly.

Heat a pan with a little oil over medium heat. Add the cut potatoes and sauté until they are lightly golden brown. Once the surface of the potatoes is slightly cooked, add the drained canned clams and stir-fry together for another 1-2 minutes. Now, add 1 mug of water, soy sauce, and cooking wine, and mix well.

Skim off any foam that rises to the surface while simmering for a cleaner stew. Cook over medium heat until the liquid reduces to a simmer. Once the sauce is almost reduced, add the corn syrup for a glossy finish. When it’s nearly done, add the sliced onion and simmer for just a moment longer until the onion turns translucent. Check if the potatoes are tender and fluffy. Turn off the heat, then add the thinly sliced green and red chili peppers, sesame seeds, and 1 Tbsp of sesame oil for added aroma.
