During the holiday season, I received some acorn powder from my in-laws and decided to make delicious acorn jelly with it. It’s a simple yet healthy dish, so let’s get started!

Ingredients

  • 180g acorn powder
  • 900ml water
  • 1/2 tsp salt
  • 2 tsp perilla oil

First, combine the acorn powder (180g) and water (900ml) in a pot. This is roughly equivalent to 1 cup of acorn powder and 5 cups of water using a standard paper cup.

Add the salt (1/2 tsp) and whisk thoroughly to ensure there are no lumps.

Now, add the perilla oil (2 tsp) for a nutty and aromatic flavor.

Using a spatula or whisk, mix the acorn powder and water until completely combined. It’s crucial to get rid of any powdery clumps.

Place the pot on the stove over medium-high heat. Stir continuously in one direction until the mixture begins to change color and thicken. This initial stirring is key to achieving the right texture.

Once the color starts to change, reduce the heat to medium-low. Continue stirring in the same direction for about 10 minutes. Keep stirring to prevent the jelly from sticking to the bottom of the pot. Cook until the mixture becomes thick and glossy.

When the jelly reaches your desired consistency, turn off the heat. Give it an additional 2-3 stirs using the residual heat. This step helps to create a smoother and chewier texture.
