Flavorful and Super Easy Oyster Mushroom Stir-fry Recipe
Make a delicious and nutritious oyster mushroom stir-fry, known for being low in calories and rich in dietary fiber, which can help lower cholesterol levels. Its chewy texture and savory flavor make it a perfect side dish for rice or a simple appetizer.
Main Ingredients- 200g Oyster mushrooms
- 1/2 Onion
- 1/4 Carrot
- 1/2 Green onion stalk
- 1/2 Tbsp Minced garlic
Seasoning & Finishing- 1 tsp Salt
- 1/2 Tbsp Oyster sauce
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- 1 tsp Salt

Cooking Instructions
Step 1
First, prepare the oyster mushrooms. Trim off about 1cm from the tough base of the mushrooms. If the mushrooms are large, tear them by hand or slice them in half lengthwise.
Step 2
Gently rinse the prepared oyster mushrooms under cold water to remove any debris. Drain them well in a colander, then add 1 tsp of salt and gently massage the mushrooms. Let them sit for about 20 minutes to salt-cure. This process draws out excess moisture, making the mushrooms chewier and preventing them from releasing too much water when stir-fried. After salting, squeeze out as much liquid as possible by hand.
Step 3
Prepare the vegetables for stir-frying. Thinly slice the carrot and onion. Slice the green onion diagonally. Having all the vegetables prepped beforehand will make the cooking process much smoother.
Step 4
Now, let’s start stir-frying! Heat a generous amount of cooking oil in a pan over medium heat. Add the sliced carrots and stir-fry until they begin to soften slightly.
Step 5
When the carrots are about half-cooked, add the sliced onions to the pan and continue to stir-fry. Cook until the onions become translucent, which will enhance their sweetness.
Step 6
Once the onions are about half-translucent, add the squeezed oyster mushrooms to the pan and stir-fry. The mushrooms will wilt as they cook.
Step 7
When the oyster mushrooms are mostly cooked, add 1/2 Tbsp of oyster sauce, 1/2 Tbsp of minced garlic, and the sliced green onions. Stir-fry until all the ingredients are well combined. Since the mushrooms were pre-salted, be cautious with adding more salt. Adjust the seasoning minimally, considering the saltiness of the oyster sauce.
Step 8
Once all the ingredients are evenly cooked and the flavors have melded, turn off the heat. Finish by stirring in 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds for a nutty aroma. Your delicious oyster mushroom stir-fry is ready! It’s wonderful served over warm rice.
