Injeolmi Dough

  • 2 cups glutinous rice flour
  • 2 Tbsp sugar
  • 1/2 tsp salt
  • 1 cup water

Cooking Instructions

First, prepare your glutinous rice flour. I personally enjoy using the 흙애서 (Heuk-ae-seo) brand, as its distinct nutty flavor is wonderful for making Injeolmi.

In a large bowl, combine the glutinous rice flour, sugar, and salt. You can adjust the amounts of sugar and salt to your preference.

Gradually add water while mixing and kneading the glutinous rice flour. It might seem a bit powdery at first, but keep mixing until it forms a dough.

When kneading, it’s important to knead evenly without clumping it to one side. Knead it multiple times to develop a chewy texture.

Once the dough has come together, transfer it to a microwave-safe bowl. Microwave for about 3-5 minutes (adjust time based on your microwave’s power). After removing from the microwave, while it’s still warm, knead it a few more times vigorously. This step is crucial for achieving that perfectly chewy texture.

Generously sprinkle roasted grain powder (misutgaru) onto a wide plate or tray. Place the warm, kneaded dough onto the powder and roll it around to coat both sides evenly. If you prefer a sweeter taste, you can mix sugar with the misutgaru for the coating. Finally, cut the dough into your desired bite-sized pieces. Your delicious Injeolmi is ready!
