Cooking Instructions
Step 1
Slice the fish cakes into bite-sized pieces, about 1cm thick. This ensures a pleasant chewy texture.
Step 2
In a pot, combine 4 cups (approx. 800ml) of water with 1 tsp of minced garlic and 2 Tbsp of the noodle soup base. These are the foundational ingredients for a flavorful broth.
Step 3
Bring the water with the noodle soup base to a rolling boil over high heat. Once boiling, add the thinly sliced green onions. Adding green onions will make the broth even more refreshing and clean-tasting.
Step 4
Generously add the sliced squid and chive fish cakes to the pot. The fish cakes will absorb the broth’s flavor, enhancing the overall taste.
Step 5
The squid and chive fish cakes are already seasoned, so you likely won’t need to add extra salt. Enjoy the inherent flavor of the fish cakes.
Step 6
Cook the somen noodles according to package directions, then rinse them under cold water and drain thoroughly. Place the drained noodles into a serving bowl. Draining well prevents the noodles from becoming mushy.
Step 7
In a small bowl, combine all the seasoning sauce ingredients: gochugaru, soy sauce, sesame oil, ginger juice, sugar, minced garlic, chopped red chili, chopped perilla leaves, chopped onion, and sesame seeds. Mix well to create a delicious seasoning sauce. Feel free to adjust the amount of soy sauce or gochugaru to your preference.
Step 8
Pour the hot, boiling fish cake broth generously over the noodles in the serving bowl. Top with 1-2 Tbsp of the prepared seasoning sauce and mix well before enjoying. For a cold version, you can chill the broth beforehand.
