This recipe was inspired by my son, who absolutely adores cheese! I decided to add some of his favorite cheese while making hotcakes, and it turned out to be a delicious and unique twist. I’m excited to share this recipe with you! These hotcakes offer a delightful chewy texture combined with a rich cheesy flavor, making them a special treat that both kids and adults will love.

  • Hotcake mix 250g
  • Milk 150g
  • 1 large egg
  • Mozzarella cheese 50-100g (adjust to your preference)

In a large mixing bowl, crack 1 large egg. Using a whisk or fork, beat the egg vigorously until it becomes frothy and airy. This step is key to making your hotcakes extra fluffy!

Gently pour 150g of milk into the beaten egg and stir lightly to combine. Next, add 250g of hotcake mix. For a smoother batter, it’s best to sift the mix into the bowl. Stir just until the dry ingredients are incorporated and no flour streaks remain. Be careful not to overmix, as this can result in tough hotcakes.

Heat a non-stick skillet or hotcake pan over medium-low heat. Lightly grease the pan with a thin layer of cooking oil using a paper towel. Ladle about 3 tablespoons of the batter onto the pan to form a round, flat shape. Immediately sprinkle your desired amount of mozzarella cheese over the batter. The cheese will melt beautifully into the hotcake.

Once you’ve sprinkled enough cheese, carefully ladle another portion of batter on top to thinly cover the cheese layer. This helps to encase the cheese within the hotcake, adding a wonderfully moist and chewy texture.

Cook over medium-low heat until the bottom of the hotcake is golden brown. Then, carefully flip it using a spatula. Cook the other side for about 2-3 minutes until it’s also golden brown.
