Super Easy Cheese Rice Cake Skewers: A Special Snack for Cold Days at Home
Craving a delicious snack but don’t want to go out in the cold? Thinking about what to make, I decided to create a simple cheese tteokkochi using leftover gara tteok (rice cakes) from the fridge! The rice cakes are wonderfully chewy, and the cheese is perfectly salty – making this cheese tteokkochi incredibly tasty. You can easily make this simple snack, so why not give it a try? It’s truly easy!
Ingredients- 2 lines of Gara Tteok (rice cakes, refrigerated or frozen)
- 2 slices of Cheddar Cheese
- Honey, a drizzle (optional)
- Parsley flakes, a sprinkle (for garnish)
Cooking Instructions
Step 1
First, prepare your ingredients. You’ll need 2 lines of gara tteok (rice cakes) and 2 slices of cheddar cheese. The rice cakes can be either refrigerated or frozen.
Step 2
If using frozen rice cakes, thawing them properly is key. Cut the rice cakes in half into bite-sized pieces (about 5-7 cm long). Then, place them in the microwave and heat for 1 minute and 30 seconds. If you try to grill or cook frozen rice cakes directly, they can become hard on the outside while remaining cold inside. So, make sure to thaw them first. If the rice cakes are still hard after thawing, briefly blanch them in boiling water until they become soft and pliable. This will make them easier to cook.
Step 3
Now it’s time to cook the rice cakes. Line your air fryer basket with aluminum foil. Place the prepared rice cakes on top. Air fry at 180°C (356°F) for 5 to 6 minutes, or until they turn golden brown and slightly crispy on the outside. If you don’t have an air fryer, you can pan-fry them over medium-low heat with a little oil, turning them occasionally until golden.
Step 4
While the rice cakes are cooking, prepare the cheese. Cut each slice of cheddar cheese in half to fit the size of the rice cakes. You’ll be placing half a slice of cheese on each skewer, but to ensure full coverage, it’s a good idea to cut them into 2-3 smaller pieces so you can arrange them nicely on and around the rice cake.
Step 5
Carefully remove the golden-brown rice cakes from the air fryer. Now, insert wooden skewers into each piece of rice cake. It’s much easier to insert the skewers after the rice cakes have been cooked, as they will be softer and less likely to break.
Step 6
While the rice cakes are still warm, place the prepared cheese slices on top and gently press them to adhere. Shape the cheese so it sticks well to the rice cake. Then, sprinkle with parsley flakes for garnish. Finally, place the skewers in the microwave and heat for just 10 seconds! This short burst will melt the cheese perfectly, making it cling neatly to the rice cakes. Be careful not to microwave for too long, or the cheese might melt and drip off. Your delicious cheese tteokkochi is now ready to enjoy!
