Main Ingredients
  • 2 servings Pasta (spaghetti or linguine recommended)
  • 100g Cooked fiddlehead ferns, cut into bite-sized pieces
  • 1/2 Onion, thinly sliced
  • 4-5 cloves Garlic, thinly sliced
  • 2 Green bell peppers, seeds removed and thinly sliced
  • 1 Red bell pepper, seeds removed and thinly sliced
  • 1 Korean chili pepper (Cheongyang chili), seeds removed and thinly sliced (optional, for extra heat)
  • Olive oil, as needed
  • 1/2 Tbsp Coarse salt (for boiling pasta)
  • Pinch of black pepper

Seasoning Mix
  • 1/2 Tbsp Oyster sauce
  • 1 Tbsp Soy sauce
  • 1 Tbsp Oligodang (corn syrup) or honey
  • 1 Tbsp Cooking wine (Mirin)
  • 1 Tbsp Sesame oil

Cooking Instructions

Step 1

First, rinse the cooked fiddlehead ferns under running water and trim them into bite-sized pieces, about 2-3 cm long. Ensure they are easy to eat.

Step 2

Peel and thinly slice the onion. Peel and thinly slice the garlic cloves to release their aromatic flavor.

Step 3

Remove the stems and seeds from the green bell peppers, red bell pepper, and Korean chili pepper. Slice them thinly into strips, similar in thickness to the onion. Adjust the amount of Korean chili pepper if you prefer it spicier.

Step 4

In a small bowl, combine the oyster sauce, soy sauce, oligodang, cooking wine, and sesame oil. Whisk them together to create a well-balanced sauce. Having the sauce ready beforehand ensures that the flavors meld beautifully when added to the pan.

Step 5

Bring a large pot of water to a rolling boil. Add the coarse salt and then carefully add the pasta. Cook according to package directions, aiming for al dente (about 7-9 minutes), or slightly less, as it will continue to cook in the sauce.

Step 6

While the pasta is cooking, heat a skillet over medium heat and add a generous amount of olive oil. Sauté the sliced garlic and onions until the garlic is fragrant and the onions are softened and translucent.

Step 7

Add the prepared fiddlehead ferns to the skillet with the garlic and onions. Stir-fry them for about 3-4 minutes to enhance their flavor and remove excess moisture.

Step 8

Drain the cooked pasta and immediately add it to the skillet. Pour in the prepared sauce and add the sliced chili peppers. Toss everything together and stir-fry over medium-high heat until the pasta is well coated with the sauce and the flavors have combined.

Step 9

Continue stir-frying until the sauce has thickened slightly and coats the pasta beautifully. Finish with a pinch of freshly ground black pepper. Be careful not to overcook the pasta at this stage.

Step 10
