Ingredients

  • 1 Tbsp minced garlic
  • 4 Tbsp soy sauce for soup (guk-ganjang)
  • 1/2 tsp MSG-based seasoning (Dasida)
  • 2 Tbsp sesame oil
  • A pinch of toasted sesame seeds
  • 60g dried bracken
  • A little cooking oil

Cooking Instructions

Step 1

First, since dried bracken can have dust on it, rinse it thoroughly in cold water two to three times. Thorough rinsing will ensure a cleaner final dish.

Place the washed bracken in a pot and cover it generously with rice water (ssal-tteumul). Using rice water helps to effectively remove the bracken’s unique bitter taste and any unwanted odors, making it much softer and more delicious.

Bring the pot of rice water and bracken to a boil over high heat. Once it starts boiling vigorously, reduce the heat to medium and simmer for about 15 to 20 minutes, or until the bracken is completely tender. Cooking it for the right amount of time is key to achieving the perfect texture.

Drain the boiled bracken and soak it in cold water overnight (approximately 8 hours or more) to completely remove any toxins and bitterness. Bracken can contain small amounts of natural toxins, so it’s crucial not to skip this step. This process ensures it’s safe and delicious to consume.

After soaking overnight to remove toxins and bitterness, cut the bracken into bite-sized pieces. If they are too long, they can be difficult to eat, so cutting them into lengths of about 4-5 cm is recommended.

Heat a little cooking oil in a pan over medium-high heat. Add the cut bracken and stir-fry quickly for 1-2 minutes. This step helps to enhance the bracken’s chewy texture and add a savory depth.

Add the soy sauce for soup (guk-ganjang) (4 Tbsp), MSG-based seasoning (Dasida) (1/2 tsp), and minced garlic (1 Tbsp) to the pan. Stir-fry everything together until the seasoning is evenly distributed. Cooking over medium-low heat will prevent burning and allow the flavors to meld beautifully.
