Easy Side Dish Recipe: Stir-Fried King Oyster Mushrooms (Beginner Friendly)
Have you ever wondered what to do with leftover king oyster mushrooms? This recipe is your answer! You can easily make a chewy and delicious side dish, stir-fried king oyster mushrooms. I tend to cook on the milder side, so please taste and adjust the seasoning to your preference. It’s perfect as a side dish for rice or packed into bento boxes!
Main Ingredients- 3 King Oyster Mushrooms
- 20g Chives
- 10g Green Onion
Seasoning- 0.8 Tbsp Oyster Sauce
- 2 pinches Salt
- 0.5 Tbsp Sesame Oil
- 3 Tbsp Grapeseed Oil
- Pinch of Black Pepper
- A little Sesame Seeds

Cooking Instructions
Step 1
First, gently rinse the king oyster mushrooms under running water and pat them dry. Trim the tough ends of the mushrooms. Slice them into bite-sized pieces, about 5cm long and 0.5cm thick. Aim for a thickness that will hold up well during stir-frying; too thin and they might become mushy.
Step 2
Cut the chives into lengths slightly shorter than the king oyster mushrooms, about 3-4cm. Finely chop the green onion, preparing it for making infused oil. Once your vegetables are prepped, you’re halfway to a delicious dish!
Step 3
Heat a pan over medium-low heat and add the grapeseed oil (3 Tbsp) and the chopped green onion. Sauté the green onion until its fragrant aroma infuses the oil, creating a flavorful green onion oil. This step significantly enhances the overall taste of the mushroom dish.
Step 4
Once the green onion oil is fragrant, add the sliced king oyster mushrooms. Stir-fry over medium-low heat for about 3-4 minutes. The mushrooms will release their own moisture as they cook, so there’s no need to add extra water at this stage. Cook them until they achieve a pleasant chewiness.
Step 5
As the mushrooms begin to cook, add about 0.8 Tbsp of oyster sauce and stir well to combine. The umami from the oyster sauce will enrich the mushroom’s natural flavor.
Step 6
Taste the mushrooms and if you find them a little bland, add about 2 pinches of salt to adjust the seasoning to your liking. Adjusting the seasoning to your personal preference is key for any side dish!

Once the seasoning is adjusted, add the chopped chives to the pan. Stir-fry gently over low heat just until the chives are slightly wilted but still retain some crispness. You want to preserve their fresh aroma and crisp texture. Avoid overcooking, as they will become soft. Turn off the heat as soon as the chives are slightly softened.
Step 8
After turning off the heat, drizzle in 0.5 Tbsp of sesame oil and a pinch of black pepper for added fragrance. Gently toss everything together with a spatula to ensure the seasonings are evenly distributed.
Step 9
Finally, sprinkle a generous amount of sesame seeds over the top to finish. Your chewy and savory stir-fried king oyster mushrooms are ready! Enjoy this delightful dish with a warm bowl of rice. ^^
