Main Ingredients- 300g Oyster mushrooms: It’s important not to blanch them for too long to maintain their chewy texture.
- 1 Onion: Adds sweetness and depth of flavor.
- 1/2 Carrot: Provides color and a crisp texture.
- 1/2 Green onion: Adds a fragrant aroma at the end.
Seasoning Ingredients- 2 Tbsp Perilla oil: Adds a nutty, savory flavor.
- 2 Tbsp Olive oil: Used for stir-frying. Can be substituted with vegetable oil.
- 2 Tbsp Minced garlic: Enhances the depth of flavor.
- 1 Tbsp Oyster sauce: Adds umami.
- 2 Tbsp Soy sauce: Provides basic seasoning. Adjust to your preference.
- 1 Tbsp Sesame seeds: Adds nuttiness and a visually appealing finish.
- 2 Tbsp Perilla oil: Adds a nutty, savory flavor.
- 2 Tbsp Olive oil: Used for stir-frying. Can be substituted with vegetable oil.

Cooking Instructions
Step 1
First, trim the tough ends off the oyster mushrooms and clean them. If any mushrooms are large, tear them into bite-sized pieces.
Step 2
Wash, peel, and thinly julienne the carrot and onion. Julienne carrots retain a better texture.
Step 3
Finely chop the green onion, including both the white and green parts. This will help distribute its fresh aroma throughout the dish.
Step 4
Bring a pot of water to a boil. Add the prepared oyster mushrooms and blanch for just about 30 seconds to 1 minute. Be careful not to over-blanch, as this can make the mushrooms mushy or tough! Immediately rinse them under cold water and squeeze out excess moisture.
Step 5
Heat a pan over medium heat and add 2 Tbsp of perilla oil and 2 Tbsp of olive oil. Add 2 Tbsp of minced garlic and slowly sauté over low heat until fragrant. Be careful not to burn the garlic.
Step 6
Once the garlic is fragrant, add the julienned carrots and stir-fry briefly. When the carrots start to turn translucent, add the onions and continue to stir-fry until the onions become transparent and release their sweetness.
Step 7
Now, add the squeezed oyster mushrooms to the pan and stir-fry together. Mix the mushrooms evenly in the pan as they cook. Then, add 2 Tbsp of soy sauce and 1 Tbsp of oyster sauce to season. Taste and add more soy sauce if needed to adjust the saltiness to your liking.
Step 8
Finally, add the chopped green onions and 1 Tbsp of sesame seeds, and stir-fry quickly one last time. Your delicious stir-fried oyster mushrooms are ready! Enjoy them as a side dish for your meals or packed lunches.
