Main Ingredients- 250g glutinous millet flour
- 6.5 Tbsp hot water
- Chopped nuts (as desired for topping)
- Cooking oil (generous amount)
Cooking Instructions
Step 1
It’s convenient to keep glutinous millet flour frozen and ready for use whenever you crave these pancakes. Thaw it overnight in the refrigerator before cooking for a smooth texture.

Measure out the thawed glutinous millet flour. (The amount shown in the picture is roughly a full udon bowl.)
Step 3
Prepare the dough using hot water for an ‘ikbanjuk’ (hot water dough). It’s important to make the dough quite stiff; this prevents it from sticking to the pan too much and reduces excessive stretching when frying.
Step 4
Knead the dough thoroughly until it becomes smooth and firm. This kneading process is key to achieving the signature chewy texture of Chapssal Sujjeon.

Once the dough is ready, it should fill a large bowl.

In a 28cm frying pan, spread the dough as thinly and widely as possible, ensuring there’s space between each piece as they can stick together.

After preheating the pan, reduce the heat to low and cook for 8-10 minutes. Spreading the batter thinly is crucial for even cooking.

As the edges of the pancake start to puff up and turn golden brown, it’s a sign that the inside is cooking nicely.
