Shiitake mushrooms, with their luxurious aroma and chewy texture, are truly a favorite! However, dried shiitake mushrooms often get dehydrated and wasted. Don’t let them go to waste; store them in the freezer and bring them back to life with this delicious recipe. Today, we’re rehydrating dried shiitake mushrooms and stir-frying them with a spicy seasoning. Instead of the usual soy sauce-based sauce, we’re adding a touch of chili powder for a unique twist that will offer a completely different and exciting flavor experience compared to your everyday shiitake mushroom stir-fry. This dish is perfect as a side for rice or even as a snack. Let’s get started on making these delightful stir-fried dried shiitake mushrooms!
Basic Ingredients- 15 Dried shiitake mushrooms
- 1 handful of chives (about 50g)
- 1/2 medium onion
- 1/2 Tbsp minced garlic
- A little cooking oil
Seasoning Ingredients- 2 Tbsp chili powder
- 3 Tbsp soy sauce
- 2 Tbsp cooking wine (mirin or similar)
- 1/2 Tbsp sugar
- 1 Tbsp sesame oil
- 1/2 Tbsp sesame seeds
- 2 pinches of salt (approx. 1g)
- 2 pinches of black pepper (a pinch)
- 2 Tbsp chili powder
- 3 Tbsp soy sauce
- 2 Tbsp cooking wine (mirin or similar)
- 1/2 Tbsp sugar
- 1 Tbsp sesame oil
- 1/2 Tbsp sesame seeds
- 2 pinches of salt (approx. 1g)
- 2 pinches of black pepper (a pinch)
Cooking Instructions
Step 1
First, prepare 15 dried shiitake mushrooms. Place them in a bowl and cover with water. Let them soak for about 20 to 30 minutes until fully rehydrated. This process softens them, removing their inherent toughness, making them perfect for cooking.
Step 2
Once rehydrated, drain the dried shiitake mushrooms thoroughly by pressing out the excess water. Then, slice them into bite-sized pieces. You can discard or finely chop the tough stems, or slice them thinly if you prefer. Cutting larger mushrooms into halves or quarters will help them cook evenly.
Step 3
Cut the chives into approximately 5cm lengths. Peel and thinly slice the half onion. Adding vegetables towards the end of cooking helps maintain their crisp texture.
Step 4
Now, let’s make the delicious seasoning sauce. In a bowl, combine 2 Tbsp chili powder, 3 Tbsp soy sauce, 2 Tbsp cooking wine, and 1/2 Tbsp sugar. Mix everything well. Be mindful not to add too much sugar, as it can cause the sauce to burn.
Step 5
Heat a little cooking oil in a pan over medium heat. Add the prepared shiitake mushrooms and 1/2 Tbsp of minced garlic. Stir-fry together until the mushrooms soften slightly and release their aroma.
Step 6
Once the shiitake mushrooms are partially cooked, add the sliced onions and stir-fry until they become translucent. When the onions start to soften, add the chives. For seasoning, add 2 pinches of salt and 2 pinches of black pepper. Be careful not to overcook the chives, as they cook very quickly.
Step 7
When all ingredients are well combined, pour in the prepared seasoning sauce. Stir-fry quickly over medium-low heat to ensure the sauce evenly coats all the ingredients. Avoid cooking over high heat, as this can cause the sauce to burn.
Step 8
Transfer the perfectly stir-fried dried shiitake mushrooms to a serving plate. The wonderfully chewy texture of the dried shiitake mushrooms, combined with the spicy sauce, creates a delectable side dish that will stimulate your appetite.
