Chewy and Spicy-Sweet Stir-fried Pork with Gochujang Recipe

Main Ingredients

  • 2 lbs (approx. 600g) Pork Shoulder, cut into bite-sized pieces
  • 1/6 Cabbage (approx. 150g), roughly chopped
  • 1 Onion (approx. 150g), thinly sliced
  • 1 Green Onion (white part primarily), cut diagonally
  • 1/3 Carrot (approx. 50g), thinly sliced into half-moon or leaf shapes

Sauce Ingredients

  • 4 Tbsp Gochujang (Korean chili paste, generous amount)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 4 Tbsp Soy Sauce
  • 2 Tbsp Sugar
  • 2 Tbsp Corn Syrup (or Oligosaccharide)
  • 2 Tbsp Maesil Cheong (Plum Extract)
  • 2 Tbsp Minced Garlic
  • 1 tsp Ginger Powder (or 1/2 tsp minced fresh ginger)
  • Pinch of Black Pepper
  • 1 Tbsp Salt (for marinating pork)

Cooking Instructions

Step 1

In a large bowl, combine gochujang, gochugaru, soy sauce, sugar, corn syrup, maesil cheong, minced garlic, ginger powder, and black pepper.

Using a spatula or spoon, mix the sauce ingredients thoroughly until well combined and no lumps remain. Preparing the sauce in advance makes the stir-frying process much smoother.

Add the prepared pork shoulder pieces to the bowl with the sauce. Gently toss and mix to ensure each piece of pork is evenly coated with the sauce. Marinating the pork beforehand allows the flavors to penetrate deeply.

Roughly chop the cabbage. Thinly slice the onion. Cut the green onion diagonally. Slice the carrot thinly into half-moon or leaf shapes. Having all the vegetables prepped will allow for a seamless cooking process.

Heat a little oil in a pan over medium heat. Add the marinated pork and stir-fry for about 3 minutes until it starts to change color. Once the pork is partially cooked, add the onion, green onion, and carrot (reserving the cabbage for later). Stir-fry together with the pork.

Increase the heat to high and continue to stir-fry, mixing well to combine the vegetables and pork. Scrape the bottom of the pan occasionally to prevent sticking. The vegetables will begin to soften and the pork will continue to cook.

When the pork is almost cooked through, approximately 10 minutes into cooking, add the reserved cabbage. Cabbage cooks quickly, so adding it towards the end helps maintain its crisp texture.

Continue to stir-fry over high heat for another 2-3 minutes, until the pork is fully cooked and the vegetables are tender-crisp. Stir until the sauce thickens and coats everything beautifully, giving it a glossy finish. Your delicious stir-fried pork with gochujang is ready to be served over hot rice!
