First, rinse the beef eye of round under clean water. Place the beef in a pot, cover it with enough water to submerge, and boil over high heat for at least 20 minutes until tender. Boiling it thoroughly makes the beef wonderfully soft.

Once the beef is cooked, remove it from the pot and gently rinse off any surface blood. Let it cool slightly so it’s easier to handle. Then, cut it into bite-sized pieces or shred it along the grain with your hands. Since it’s been boiled thoroughly, it should shred easily.

Now, let’s prepare the braising sauce. Pour 400ml of the beef-boiling broth back into the pot. Add 4 tablespoons of soy sauce, 1 to 1.5 tablespoons of oligosaccharide (adjust the sweetness to your liking), and a pinch of black pepper. Whisk everything together well.
