Chewy and Sweet Dried Persimmon Salad: A Unique Side Dish Recipe
Introducing the #DriedPersimmonSalad, a truly special side dish with its chewy texture and sweet flavor! While delicious eaten on its own as a snack, when mixed with a gochujang-based dressing, it becomes a fantastic accompaniment to rice. Using delicious dried persimmons I recently received as a gift, I like to prepare them for my children as a snack and sometimes as a side dish like this.
Ingredients- Main Ingredient: 200g dried persimmons (gam-mal-rang-i)
- Seasoning: 1/2 Tbsp gochujang (Korean chili paste)
- Seasoning: 1/2 Tbsp gochugaru (Korean chili flakes)
- Seasoning: 1/2 Tbsp soy sauce
- Seasoning: 1 Tbsp plum extract (maesil-cheong)
- Seasoning: 1/2 Tbsp oligodang (corn syrup or similar)
- Garnish: A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, prepare all the seasoning ingredients: gochujang, gochugaru, soy sauce, plum extract, oligodang, and toasted sesame seeds. In a wide bowl, combine all these seasoning ingredients generously and mix them thoroughly with a spoon to create the sauce. You can reserve a small amount of sesame seeds for garnishing later.
Step 2
Now, let’s prepare the dried persimmons. If the dried persimmons are small enough to be eaten in one bite, you can use them as they are. For larger ones, use scissors or a knife to cut them into two or three pieces, making them into bite-sized portions. This ensures the seasoning coats evenly and makes them easier to eat.
Step 3
Next, add the prepared dried persimmons to the sauce and gently mix them together with your hands (or a spoon). Instead of adding all the sauce at once, start with about two-thirds of it. Mix well, then taste the persimmons and the seasoning. Adjust by adding more sauce as needed to suit your preference. This helps achieve a balanced, not-too-salty flavor. Finally, sprinkle with toasted sesame seeds to finish.
