  • 4 Tbsp Fish Sauce
  • 5 Tbsp Oyster Sauce
  • 5 Tbsp Plum Extract
  • 10 Tbsp Honey
  • 1 Tbsp Black Pepper
  • 3 Tbsp Minced Garlic
  • 1 Tbsp Ginger Powder

Cooking Instructions

Prepare 2kg of beef eye of round, known for its tender texture. It’s convenient to order it pre-sliced to a 0.6cm thickness specifically for jerky from online retailers.

Soak the sliced beef in cold water for about 1 hour to remove excess blood. To ensure freshness while the blood is being removed, keep the beef refrigerated.

After soaking, roll up the beef slices tightly, similar to making a sushi roll. This technique helps to drain excess moisture effectively during the drying process and creates a nice shape.

Place the rolled beef on paper towels and press down to remove as much moisture as possible. Thoroughly removing moisture is crucial for the marinade to penetrate the meat well and for the jerky to dry properly!
