Easy and Delicious Injeolmi Toast Recipe
After a hearty breakfast, you might be looking for a light yet satisfying lunch. With some Injeolmi (Korean rice cake) and bread on hand, I decided to whip up this delightful snack that doubles as a quick lunch. It’s a wonderful treat that combines the chewiness of rice cakes with the crispness of toast and the gooeyness of cheese.
Main Ingredients- 4 slices of bread
- 100g of pizza cheese (shredded mozzarella is also great)
- 1/2 pack of Injeolmi (about 8 pieces)
Cooking Instructions
Step 1
First, slice the Injeolmi into bite-sized pieces, about 1 to 2 cm thick. Arrange these Injeolmi pieces generously on top of each slice of bread, ensuring they cover the entire surface. Layering them generously will give you a delightful chewy bite in every mouthful.
Step 2
Next, sprinkle the pizza cheese evenly over the Injeolmi. The melting cheese will help bind everything together and add a wonderful savory flavor. Then, scatter the sliced nuts over the cheese for added texture and nutritional value. If you like, a sprinkle of parsley flakes will add a touch of color and freshness. Cover the bread with a microwave-safe lid or another bowl and microwave for about 1.5 to 2 minutes, or until the cheese is fully melted and bubbly. (Microwave times may vary depending on your appliance).
