Main Ingredients

  • 1 Tbsp powdered agar-agar
  • 2 cups water
  • 500g white bean paste

Flavoring Agents

  • 1 Tbsp corn syrup
  • 4 Tbsp fermented mulberry liquid
  • 3 Tbsp mulberry jam

Cooking Instructions

First, soak 1 tablespoon of powdered agar-agar in 2 cups (400ml) of cold water for at least 30 minutes until fully softened. Once the agar-agar is completely hydrated, transfer it to a pot and bring to a simmer over medium-low heat. It’s crucial to stir gently to prevent the agar-agar from sticking to the bottom of the pot. Continue simmering until the agar-agar is completely dissolved and the liquid becomes clear. Once the agar-agar is clear, add the 4 tablespoons of fermented mulberry liquid and 3 tablespoons of mulberry jam. Stir well over medium heat until fully combined and smooth.

Now it’s time to adjust the sweetness and consistency. Add 500g of white bean paste and mix until it’s smoothly incorporated without any lumps. Once the bean paste is fully blended, increase the heat from low to medium-high and bring it to a rolling boil, like lava, for about 5 minutes. This process helps thicken the jelly. Remove from heat briefly to cool slightly, then return to medium heat and simmer for over 10 minutes, stirring constantly. Finally, simmer over low heat for another 5 minutes. You’ll notice the mixture becoming thicker, glossy, and developing its characteristic deep color. Adding 1 tablespoon of corn syrup at the end will make the jelly slightly softer and improve its texture.

Pour the prepared jelly mixture into a mold or a square container that has been lightly greased or lined. Smooth out the top surface. Let it cool completely at room temperature until set. Once fully firmed, cut into desired portions and enjoy. For an even firmer texture, store in the refrigerator.
