You can never go wrong with the classic sweet and salty combination, right? The special trick to this recipe is braising the potatoes using only their own moisture, without adding any extra water, which creates a wonderfully chewy texture. My little one, who already loves potatoes, devours a bowl of rice with just this side dish. It’s easy to make and tastes so good, you’ll find yourself making it often.
Ingredients- 3 medium potatoes
- 1/4 stalk of green onion
- 1.5 Tbsp corn syrup (or honey for older babies)
- 1 Tbsp soy sauce
- 1 tsp minced garlic
- 1 Tbsp sesame oil
- A pinch of sesame seeds (for garnish)
Cooking Instructions
Step 1
First, cut the potatoes into bite-sized cubes, about 1.5 cm, suitable for your baby to eat. Cutting them too small might cause them to mash, so the right size is important.
Step 2
Finely chop the green onion. If serving very young children, you can use spring onions or mince the green onion very finely instead.
Step 3
Rinse the cut potatoes lightly under cold running water 2-3 times. This process removes excess starch from the surface of the potatoes, resulting in a cleaner and chewier braised dish.
Step 4
Add 1.5 Tbsp of corn syrup to the rinsed potatoes and gently toss to coat. Coating the surface of the potatoes evenly with the corn syrup is the key step.
Step 5
Let the coated potatoes sit for about 20 minutes. During this time, the potatoes will release their natural moisture, forming the braising liquid. This natural moisture usage is the secret to making chewy and delicious braised potatoes!
Step 6
Now, place the moisture-releasing potatoes in a pot. Add 1 Tbsp of soy sauce and 1 tsp of minced garlic. You don’t need to add extra water; the moisture from the potatoes and the seasonings will combine to create a flavorful braise.
Step 7
Start by bringing the mixture to a boil over medium-high heat. Once it starts bubbling vigorously, reduce the heat to medium-low. Cover the pot and let it simmer for about 5 more minutes. Add the chopped green onions during this simmering time to infuse a fragrant aroma.
Step 8
Finally, turn off the heat, drizzle in 1 Tbsp of sesame oil, sprinkle with a pinch of sesame seeds, and gently toss to combine. Your delicious soy-braised potatoes are ready! Serve them warm with rice, and your baby is sure to love them.
