Slice the 2 king oyster mushrooms as thinly as possible. The thinner the slices, the better they absorb the sauce and the more tender they become. Using a vegetable peeler can help achieve thin and uniform slices.

For the 50g of oyster mushrooms, remove the tough ends and tear them by hand along the grain into bite-sized pieces. Preparing these two types of mushrooms together creates a great balance of texture and flavor.

Thinly slice the bird’s eye chili (or red chili) after removing the seeds for added color. Also, slice the 1/2 stalk of green onion (approx. 35g) diagonally to add its fresh aroma.

Remove the plastic packaging from the 4 imitation crab sticks, then tear them by hand along the grain into bite-sized pieces. Tearing them by hand allows the sauce to penetrate better and results in a softer texture.

Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add 1 tablespoon of minced garlic and stir-fry gently. Be careful not to burn the garlic; cook until a mild garlic aroma is released.
