Main Ingredients
  • 4 small cuttlefish, cleaned and prepared
  • 5 cabbage leaves
  • 1/2 onion
  • 1/3 stalk green onion (scallion)
  • 1 red chili pepper

Seasoning
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp sugar
  • 1 Tbsp minced garlic
  • 2 Tbsp soy sauce
  • 1 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp mirin (rice wine for cooking)
  • 1 Tbsp oligodang (corn syrup or rice syrup)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, rinse the cleaned cuttlefish under running water. Cut them into bite-sized pieces, about 2-3 cm. Roughly chop the cabbage into bite-sized pieces. Slice the onion thickly into strips. Cut the green onion diagonally, and do the same for the red chili pepper to add color.

Step 2

In a bowl, combine all the seasoning ingredients: 3 Tbsp gochugaru, 1 Tbsp sugar, 1 Tbsp minced garlic, 2 Tbsp soy sauce, 1 Tbsp fish sauce, 1 Tbsp mirin, 1 Tbsp oligodang, and 1 Tbsp sesame oil. Mix them well with a spoon until smooth, creating your stir-fry sauce. Making the sauce in advance will make cooking much easier.

Step 3

Heat 2 Tbsp of cooking oil in a pan over high heat. Add all the prepared vegetables (cabbage, onion, green onion, red chili pepper) and stir-fry quickly for about 3 minutes. You want the vegetables to be slightly softened but still crisp.

Step 4

Immediately add the cuttlefish to the pan. Stir-fry together with the vegetables over high heat until the cuttlefish is cooked through. Be careful not to overcook, as it can become tough. The cuttlefish should turn opaque.

Step 5

Once the cuttlefish is fully cooked, pour in the prepared sauce. Stir-fry for another 2-3 minutes over medium-high heat, ensuring the sauce evenly coats the cuttlefish and vegetables. The dish should become glossy and wonderfully fragrant.

Step 6

Just before turning off the heat, sprinkle in about 1/2 Tbsp of toasted sesame seeds for extra flavor. Give it a final mix to combine. Your delicious Ap-o-jing-eo Bokkeum is now ready!
