Main Ingredients- 7 pieces of sweet and spicy chicken (bones removed, approx. 200g)
- 1 ear of cooked sweet corn
- 2 bowls of cooked rice
- 1/2 tsp salt
Cooking Instructions
Step 1
First, carefully remove the bones from the 7 pieces of sweet and spicy chicken. Gather the meat and all the sauce into a bowl, aiming for about 200g. Using kitchen scissors, cut the chicken into small, bite-sized pieces (about 1-2 cm). This ensures it mixes well with the rice and provides a pleasant texture.
Step 2
Prepare the cooked sweet corn by carefully slicing off the kernels from the cob with a knife. These corn kernels will pop with each bite, adding a delightful chewy texture throughout the rice balls.
Step 3
Finely mince the 2 Cheongyang peppers. If you enjoy a spicier kick, you can include the seeds. Add the 1 Tbsp of toasted sesame seeds for a nutty aroma. Combine these with the chopped chicken and corn kernels, mixing everything thoroughly until well incorporated.
Step 4
Add 2 bowls of warm cooked rice and 1/2 tsp of salt to a mixing bowl. The salt seasons the rice. You can adjust the amount of salt based on your preference. Now, we’ll mix all the ingredients to form the base for our rice balls.
Step 5
Combine the seasoned chicken mixture, corn, peppers, and the rice in the bowl. Gently mix them together. Wearing disposable gloves, shape the mixture into bite-sized balls (about 5-6 cm in diameter). It’s easier to shape them while the rice is still warm. Your delicious chicken rice balls are ready! For an extra layer of flavor, try wrapping them in a fresh lettuce leaf.
