I made these curry king oyster mushroom fritters using king oyster mushrooms, which are affordable and have a wonderfully chewy texture! They’re super simple, making them an easy fritter recipe even for beginners.

Ingredients

  • 1 pack King Oyster Mushrooms
  • 2 Eggs
  • 1 Chili Pepper (e.g., Cheongyang pepper)
  • 1.5 Tbsp Curry Powder
  • 2 Tbsp Flour or Starch (optional, for extra crispiness)
  • A little Cooking Oil

Cooking Instructions

First, prepare all the ingredients you’ll need for making the fritters. Having everything washed and ready will make the cooking process much smoother.

Trim any dirty parts from the base of the king oyster mushrooms. Slice them thinly along the grain, about 1mm thick. Slicing them thinly is best, as thicker pieces will take longer to cook.

Wash the chili pepper, remove the stem, and then finely mince it after removing the seeds. If you prefer less spice or are cooking for children, you can substitute with a milder green pepper or adjust the quantity.

Crack the 2 eggs into a bowl. Add 1.5 tablespoons of curry powder. Use a whisk or chopsticks to beat the eggs and curry powder until well combined and smooth, ensuring there are no lumps.

Add the minced chili pepper from step 2 to the beaten egg mixture and mix well. Lightly coating the king oyster mushrooms with flour or starch before dipping them in the egg batter will help the batter adhere better and make the fritters crispier (this step is optional). Then, dip the coated mushroom slices into the egg mixture, ensuring both sides are evenly covered with the batter.
