Here’s a recipe for a delicious acorn jelly salad that you can easily make at home. Especially with a well-made special sauce, this dish comes together in a snap! Main Ingredients- Acorn jelly (Dotori Muk) 1/2 block (approx. 300g)
- Chives (Buchu) 1 handful (approx. 50g)
- Onion 1/4 (medium size)

First, let’s cut the acorn jelly into bite-sized pieces. Cut the jelly into lengths of about 3cm, then dice them into pieces about 1.5cm thick. Cutting them too small might reduce the chewy texture, so aim for a suitable size.

Next is making the delicious dressing. In a bowl, combine 3 Tbsp of store-bought Oriental dressing. Add 1/2 Tbsp of gochugaru for a pleasant spicy kick. Finally, add 1 Tbsp of sesame oil and 1/2 Tbsp of toasted sesame seeds. Stir well until all ingredients are combined. You can add a little sugar or soy sauce to taste if you prefer.

Now, let’s prepare the vegetables. Wash the chives thoroughly and cut them into lengths of 3-4cm. Cutting them too long can be inconvenient to eat. Slice the onion thinly or chop it coarsely. If slicing thinly, soaking the onion in cold water for a while and then draining can help reduce its pungent flavor.
