  • 1/2 Onion
  • 1/4 Scallion

  • 1 Tbsp Sugar
  • 1.5 Tbsp Soy Sauce
  • 1 Tbsp Mirin (or cooking wine)
  • 1/2 Tbsp Oyster Sauce

Cooking Instructions

Step 1

First, let’s make the sauce, the key to a delicious Makchang Donburi. In a small bowl, combine 1 tablespoon of sugar, 1.5 tablespoons of soy sauce, 1 tablespoon of mirin, and 1/2 tablespoon of oyster sauce for added umami. Mix well to create a perfect balance of sweet, savory, and rich flavors.

Step 2

Next, prepare your vegetables. Peel and thinly slice the half onion, or chop it coarsely. Cut the scallion into bite-sized pieces on a diagonal. These will add color and flavor to the dish.

Step 3

Now it’s time to cook the star ingredient: the makchang. Heat a pan over medium heat and add the 200g of pre-cleaned pork chitterlings. Cook slowly until the makchang is golden brown and slightly crispy on the edges. Be careful, as it may splatter oil. Ensure it’s fully cooked through.

Once the makchang is cooked, add the prepared sauce, sliced onion, and scallions to the pan. Stir-fry together over medium heat for about 2 minutes, ensuring the sauce doesn’t burn. This will allow the flavors to meld beautifully, completing your delicious Makchang Donburi!
