Main Ingredients- 1 cup dried mussels
- 200g dried kelp
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, rinse the dried mussels thoroughly under running water. Then, place them in a bowl and soak them in about 800ml of cold water for approximately 20 minutes until softened. Soak the dried kelp in cold water as well until it becomes pliable.
Step 2
Once the kelp is rehydrated, rub it vigorously with your hands under running water to wash away any sand or impurities. Rinse it several times until clean. By now, the soaked dried mussels should also be soft and easy to handle. (Tip: Dried mussels and kelp from the Gijang area of Busan are highly favored for their deep, rich broth and flavor, making them a star ingredient for creating a robust soup. Having them on hand is very convenient!)
Step 3
Drain the rehydrated kelp and chop it into bite-sized pieces. Place the chopped kelp into a pot. Add 1 tablespoon of sesame oil to the kelp and stir-fry over low heat until the kelp wilts and becomes tender. This sautéing step enhances the kelp’s savory flavor.
Step 4
After the kelp has been sufficiently stir-fried and softened, add the soaked dried mussels to the pot. Continue to stir-fry together for another 1-2 minutes. This brief stir-frying allows the mussels’ flavor to infuse into the kelp.
Step 5
Pour the 800ml of water into the pot with the tender kelp and mussels. Bring the soup to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer gently.
Step 6
Simmer for about 30 minutes, and you’ll have a beautifully milky broth rich with the essence of dried mussels and kelp. Finally, season the soup with 1 tablespoon of soup soy sauce and 1 teaspoon of fish sauce. You can add salt to taste if needed.
