How to Make Deliciously Chewy Dried Radish Strips Hygienically and Easily Using a Food Dehydrator

This year, radishes are abundant and delicious, so I bought a bunch and made plenty of dried radish strips! I used to buy them pre-made, but seeing unsanitary preparation methods on TV made me decide to make my own. Using a food dehydrator has been a game-changer – it’s so easy and hygienic! Now, I can make a generous batch when radishes are in season, store them in the fridge, and whip up delicious radish stir-fries whenever I crave them. Cooking Instructions

Step 1

First, wash the radishes thoroughly under running water. You can leave the skin on, or peel it thinly for an even cleaner taste. Then, slice the radishes into thick pieces, about 0.5 to 1 cm thick. Slicing them too thin can make them crumbly, while too thick will prevent them from drying properly, so aim for a consistent, moderate thickness.

Step 2

Arrange the sliced radish pieces on the dehydrator trays in a single layer, making sure they don’t overlap. This ensures even drying and prevents mold.

Step 3

Set the dehydrator to its highest temperature and begin the drying process. Typically, drying at 60-70℃ (140-158℉) for 10-15 hours is recommended, but this can vary depending on your dehydrator’s efficiency and the thickness of the radish slices. Check the radish periodically and adjust the drying time as needed.

Step 4

During the drying process, flip the radish pieces halfway through or remove any pieces that are already fully dried to ensure everything dries evenly. It’s crucial that the radish strips are completely dry and chewy. They should feel firm and have very little moisture left.

Step 5

Once the dried radish strips are completely dehydrated, let them cool slightly. Then, store them in an airtight container or resealable bag in the refrigerator. This way, they will last a long time, and you can easily use them for delicious radish stir-fries or other dishes whenever you like.
