The day before cooking, soak the dried squid tentacles in plenty of water and refrigerate. Thoroughly rehydrating them is crucial for achieving a chewy and tender texture.

Once the dried squid is fully rehydrated, cut it into bite-sized pieces. About 3-4 cm in length is ideal for easy eating after cooking.

Pour 1.5 cups (approximately 300ml) of water into a pot. This will form the base of your jorim sauce.

Add 10 tablespoons of soy sauce and 2 tablespoons of sugar to the pot. Stir well to combine these ingredients for the braising liquid. The sugar helps to enhance the squid’s natural umami and balances the overall flavor.

Add the 4 Cheongyang peppers, thinly sliced lengthwise, for a touch of heat. Stir in 1 tablespoon of minced garlic. (For a cleaner flavor, you can use 3-4 whole garlic cloves, lightly smashed. I used minced garlic as I didn’t have whole cloves on hand.) Finally, add 1 teaspoon of whole black peppercorns and bring the mixture to a boil.

Once the sauce begins to boil, add the prepared dried squid pieces. Reduce the heat to medium and let it simmer gently, allowing the squid to absorb the flavors.

Be careful not to overcook the squid, as it can become tough. I simmered mine for about 5 minutes over medium heat, until the liquid had reduced slightly and the squid looked glossy. You can adjust the cooking time based on your preference.

Turn off the heat. While the jorim is still warm, stir in 1 tablespoon of sesame oil, 2 tablespoons of corn syrup (or your preferred liquid sweetener), and a pinch of toasted sesame seeds. This adds a lovely sheen and aroma.
