Introducing our delightful Egg and Glass Noodle Dumplings, a dish that’s perfect for any occasion. These dumplings are wonderfully soft on the outside and delightfully chewy on the inside, offering a unique charm that sets them apart from typical dumplings. Main Ingredients- 1 handful of glass noodles (about 50g)
- 3 large eggs
- 1/2 stalk of green onion
- 1/4 carrot
- 1/2 Korean chili pepper (adjust to spice preference)
- 1/2 red bell pepper (for color)
- 1/4 onion (about 30g)

- 1/2 tsp sugar
- 1/2 tsp sesame oil
- Pinch of black pepper

Cooking Instructions
Step 1
First, let’s prepare the vegetables. Wash and prepare the green onion, onion, carrot, Korean chili pepper, and red bell pepper. Finely mince all the vegetables. Finely chopped vegetables will help create a beautiful shape when folding the dumplings and ensure an even distribution of the filling.
Step 2
Boil the glass noodles in water for about 5 minutes. Be careful not to overcook them, as they can become mushy. Immediately rinse the boiled noodles under cold water to remove excess starch, then drain them thoroughly in a colander. Once drained, finely chop the glass noodles using scissors or a knife. Cutting them into approximately 5mm lengths will provide a pleasant texture.
Step 3
Get a medium-sized bowl. Add all the finely minced vegetables and the chopped glass noodles to the bowl. Then, crack in the 3 fresh eggs.
Step 4
Now it’s time to season the egg mixture. Add 1/2 tsp salt, 1/2 tsp sugar, 1/2 tsp sesame oil, and a pinch of black pepper to the bowl. Use a spatula or chopsticks to mix all the ingredients thoroughly until a uniform batter is formed.
Step 5
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Pour one ladleful of the prepared batter into the pan and spread it out evenly. Once the bottom starts to turn golden brown, carefully fold the dumpling in half using a spatula or knife to create a dumpling shape. Flip and cook the other side until both sides are golden brown and cooked through. (Tip: Using a small egg pan or omelet pan will help create a more aesthetically pleasing round shape!)
Step 6
