Chewy Enoki Mushroom and Tuna Pancake
Delicious Tuna Pancake Made with Sale Enoki Mushrooms
I made a hearty and delicious pancake using enoki mushrooms and tuna that I found on sale at the supermarket! The combination of chewy enoki mushrooms and savory tuna is exquisite. Make it easily for a delightful snack for the whole family or as a side dish with drinks.
Pancake Ingredients- 1 can Tuna (drained)
- 1/2 pack Enoki mushrooms
- A little Carrot (about 1cm diced)
- 1/2 Onion
- 1 Korean Green Chili Pepper (optional)
- 1/2 Red Bell Pepper (for color)
- 4 Eggs
- Plenty of Cooking Oil
- Pinch of Salt
- Pinch of Black Pepper

First, let’s get started by preparing all the ingredients for a delicious pancake. Have your canned tuna, enoki mushrooms, carrot, onion, green chili pepper, red bell pepper, and eggs ready.

Now, it’s time to finely chop the vegetables that will add texture to your pancake. Dice the onion, carrot, green chili pepper, and red bell pepper. For the carrot, dicing about 1cm pieces will give a nice color. You can use half a red bell pepper for a touch of sweetness and color without too much heat. For the enoki mushrooms, trim off the base and separate them into smaller strands.

In a large bowl, combine the diced onion, carrot, enoki mushrooms, green chili pepper, and red bell pepper. Crack in the 4 eggs, and season with a pinch of salt and black pepper to your taste. Mix everything together thoroughly with a spatula or spoon until well combined.
